Butter Chicken with Basmati Rice
Step 1: Preheat the oven to 375 degrees. Wash and chop cilantro. Set aside.Step 2: In a large skillet, add 1 tablespoon of butter or oil. Heat for 1 minute. Add the chicken thighs to the pan. Sear until golden brown on both sides. Lower heat to medium-low.Step 3: Slowly pour the butter sauce into the pan on top of the chicken. Stir until chicken is coated with sauce. Let simmer on low heat for 8 to 10 minutes.
Step 4: In a separate pan, add 1 tablespoon of butter or oil. Add the snow peas and chopped red peppers. Sauté for 3 minutes.Step 5: Add sautéed snow peas and chopped red peppers to butter chicken. Stir for 1 minute. Add salt and pepper to taste.Step 6: While butter chicken is simmering, remove rice from bag. Place into a microwaveable bowl, cover, and microwave on high heat for 4 minutes. Set aside until ready to serve. Step 7: Place naan on the baking sheet.Bake at 375 degrees for 5 minutes. Wrap naan in foil to keep warm until ready to serve.Step 8: Place the butter chicken on a large platter. Garnish with chopped cilantro. Serve with a side dish of basmati rice and naan bread.
